Trout

The best ones are those from the region, the native ones have such a soft flesh that melts in the mouth. The most typical way of preparing trout is by stuffing them with streaked bacon or also grilled. The "rainbow" type, with red dots, is restocked and, even though the flesh is quite good, they taste very differently from the original river trout. In Tavascan, there is a fish farm where they are sold.
