El Pallars Sobirà has always been a high mountain county and it has traditionally lived on a basis of autarchic economy. These two facts, the mountain and the self sustenance, have influenced the traditional gastronomy and so, among its typical dishes we can find lamb products as the cheeses, the girella (meat and rice sausage), the palpís (a piece of meat without bone),... Meanwhile the big absentee is sea fish, which was never eaten unless salted or dried (salted cod, sardine...).
