Quince and pear from Cardós

Neither of these two fruits can be eaten unless properly cooked. But they are used a lot in our regional kitchens to make all i oli de codony o de pera (aioli), or also to prepare meat with sweet pear sauce. Pear is put in the soup and in the stew and then the broth has a rather pleasantly sweet flavour. You can try the all i oli (aioli) made with any of these two fruits in most of our restaurants. Apart from its exquisite and soft taste, it has another advantage added to it: it does not have a strong aftertaste, caused by difficult hard digestion, as the traditional aioli sauce made with only oil and garlic.
